Beef Stroganov St. Petersburg- Cook it at home!
This St. Petersburg’s stroganov recipe is made to the Tsar's specifications.

Compliments of the St. Petersburg Restaurant and Dining Club in Liverpool

Favorite Dish: St Petersburg’s Beef Stroganov
225g prime beef fillet
300g fresh onions
100g fresh mushrooms
150g soured cream
Salt and pepper
Oil for frying

Serves: 1 People

Cut the beef fillet into slender strips following the fibre of the meat. Season to taste. Chop the onions finely and fry gently in a little oil until golden. Thinly slice the mushrooms and fry separately til cooked through. Heat a touch of oil in a heavy bottomed pan until the oil starts smoking lightly. Add the beef and cook until golden. Add a tablespoon or two of brandy and set alight to flambé the meat for a few seconds. Add the cooked onion and mushrooms to the beef and stir in the soured cream. Add a teaspoon of paprika and leave the stroganov on the heat until it starts simmering. Serve with rice and wash down with a glass of Doina, a Russian Merlot from the Moldova Region.
