Russian Antonovka Apple Pie

Antonovka Apple Pie recipe (Also called Sharlotka)

Russian apple pie is a favorite food of autumn. The secret of success is a special apple  called Antonovka. They are sour and give a special taste to the sweet dough. A green apple will taste good, but all will be tasty.

3  big eggs (extra large)
3  average sour apples  (granny smith, antonovka, green apples) More if apples small.
1 cup sugar
1 cup flour
1 tsp baking soda

Peel the apples and slice into thin pieces.
Beat the egg yolks and whites separately.
Mix eggs, soda and sugar in the mixer.
Add flour gradually.
The dough must be liquid as sour cream.

Grease the pan or pour a little vegetable oil in the pan.

Put apples on the pan.

Pour the dough in to the pan evenly.

Heat the oven and bake the pie during 20-30 minutes.

When the pie is ready, put the pan on the wet napkin for 5 minutes.
It helps to detach the pie from the pan.
The apples will be on the top of the pie.

HI Sennaya,
I can suggest you some tips:
- do not put vegetable oil in the pan,
- put some flour, corn flour or semolina flour on the grease, spread it evenly,
- do cut apples only when the daugh is ready to go in to the pan or they will get black,
- put a pinch of salt,
- put a pinch of baking pawder,

Put some putter on top of the pie when it's ready to go on the table so it will look beautiful.
